These shredded chicken burritos are exactly what the title suggests — EASY! With simple yet flavorful ingredients (and a few substitutions and ingredient swaps you can consider to truly make this recipe your own!), you’ll be off and enjoying a delicious chicken burrito in no time. You need:

For the Shredded Chicken:
- 1 pound boneless, skinless chicken breasts
- 1 cup chicken broth
- 1/2 cup salsa
- 1 tablespoon olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
For the Burrito Assembly:
- 6-8 large flour tortillas
- 1 cup cooked white rice
- 1 cup canned black beans, rinsed and drained
- 1 cup shredded cheese (such as cheddar or Monterey Jack)
- 1/2 cup sour cream
- 1/2 cup chopped tomatoes
- 1/2 cup diced red onion
- 1/2 cup chopped fresh cilantro
- Lime wedges, for serving (optional)
Recipe for Chicken Burrito Filling Direction
- Add the chicken breasts, chicken broth, salsa, olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper in a slow cooker or Instant Pot. If using a slow cooker, cook on low for 6-8 hours or on high for 3-4 hours. If using an Instant Pot, pressure cook on high for 10 minutes with a natural release.
- Once the chicken is cooked, use two forks to shred the chicken in the slow cooker or Instant Pot. Stir the shredded chicken in the cooking liquid to absorb the flavors.
- If using a slow cooker, set it to warm to keep the shredded chicken warm while you assemble the burritos. If using an Instant Pot, turn on the sauté function on low to keep the shredded chicken warm.
- To assemble the burritos, warm the flour tortillas in a dry skillet or on a griddle until pliable.
- Place a spoonful of cooked white rice in the center of each tortilla.
- Add a spoonful of the shredded chicken on top of the rice.
- Sprinkle black beans, shredded cheese, sour cream, chopped tomatoes, diced red onion, and chopped cilantro on top of the shredded chicken.
- Squeeze a lime wedge over the filling, if desired, for an extra burst of flavor.
- Fold in the sides of the tortilla, then roll it up tightly into a burrito shape.
- Repeat with the remaining tortillas and filling ingredients.
- Serve the shredded chicken burritos hot with additional sour cream, salsa, or guacamole on the side, if desired.
